Fix use of LESS var syntax in docs when referencing SCSS
Example:
> ... SCSS variables (e.g., `@enable-gradients: true`) ...
Referenced SCSS but used the LESS syntax. Changed to:
> ... SCSS variables (e.g., `$enable-gradients: true`) ...
